Lemon-Lime Bay Scallops at Las Palmas Modern Mexican Restauramt  

Our weekly specials are out and once again we are making traditional mexican ingredients onto modern dishes. 

LEMON-LIME BAY SCALLOPS ~  

Scallops mixed with jalapeno, lemon, lime, tomato, green onion, parsley and olive oil. Served with plantain chips

A combination of mixed greens, red and green peppers, bacon, avocado, tortilla strips, kumquat and manchego cheese served with tequila-lime dressing

Shrimp served atop our tomato, pineapple and coconut sauce. Served with white risotto, plantains and roasted pineapple

Guajillo: Ingredient Highlight - Las Palmas Modern Mexican Restaurant

The Guajillo Chile Pepper is a dried Mirasol pepper. Used widely in Mexican cuisine this chili is known for its earthy and berry overtones. The large peppers are mild in flavor with a widely palatable amount of heat. The name Mirasol is a comibination of two spanish words, mira means to look at, and sol means the sun, Mirasol.

Ingredient Highlight: Requeson Cheese

Brought to light in this week's specials Requeson Cheese is used in our stuffed Poblano Peppers Special. So what is Requeson Cheese? 

It is a cheese that is very similar to Ricotta Cheese, and in fact requeson is the spanish work for ricotta. In traditional areas it is often seen in markets being sold wrapped in corn husks. It is similar to ricotta but softer andshould be easy to find in better latin markets. 

At Las Palmas we strive to be known as a Mexican Restaurant that incorporated traditional ingredients and flavors with modern interpretations and an openess to lating cuisine in general. Be sure to check back here often as we create inventive dishes in our signature Modern Mexican style.
